German Potato Salad
German Potato Salad is an moderately easy dinner. Made with 10-12 lg red skin potatoes, 3 tbsp. dijon mustard, 3 tbsp. real mayonnaise, 1 small can chopped black olives and 2 cloves of fresh garlic (crushed), this recipe delivers authentic, satisfying flavors. Quarter and boil potatoes until tender. Boil eggs. Let cool. Peel and cut eggs in 8 even wedges.
Gently fold mustard and mayonnaise into potatoes.
Add remaining ingredients.
Fold again with wooden spoon or rubber spatula (gently).
Then add salt and pepper to taste.
Allow to chill at least four hours.
