German Potato Cakes
German Potato Cakes is an moderately easy dinner. Made with 10 large potatoes, cut in quarters, 2 onions, cut in halves, 4 eggs, 1 1/2 c. flour and 1 tsp. baking powder, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Chop potatoes, onions, eggs, flour and baking powder in a food processor and chop.
Put a generous amount of olive oil in a pan and heat.
When the oil is hot drop a ladle of the potato mix into it and press flat.
Turn when the edges turn brown.
Serve hot together with applesauce.
Not to be made ahead or frozen.
