Gazpacho Salad
Gazpacho Salad is an impressive Spanish soup you can prepare in about 1 hour 26 minutes. Sprinkle cucumbers with 1 teaspoon salt; let stand for 30 minutes.
Combine next 6 ingredients in large salad bowl.
Next add mushrooms and scallions.
Drain and pat dry cucumbers; add to the bowl, then add parsley, tomatoes and green pepper.
Cover; chill 4 hours.
