Gazpacho
Gazpacho is an moderately easy dinner. Made with 4 c. low sodium tomato juice, 1/3 c. red wine vinegar, 2 tbsp. chopped fresh or freeze dried chives, 1/4 tsp. ground red pepper and 2 medium tomatoes, chopped, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

In large bowl, stir together tomato juice, vinegar, chives and red peppers.
Stir in tomatoes, cucumbers, green peppers, onion and garlic.
Chill 3 hours or until serving time.
Serve with low sodium croutons.
