Gazebo Cheese Soup
Gazebo Cheese Soup is an impressive dinner. Made with 1/4 c. butter, 3 green onions, sliced (with tops), 3 stalks celery, chopped with leaves, 2 carrots, grated and 2 (10 3/4 oz.) cans chicken broth, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
In a large saucepan, melt butter over low heat.
Add onions, celery and carrots; saute until soft.
Add chicken broth.
Cover and simmer for 30 minutes.
Add potato soup, cheese, parsley, hot sauce, salt and pepper.
Stir in sour cream and simmer for 15 minutes.
Add sherry and stir.
Serve hot.
Makes 10 cups.
