Garden Zucchini Pie
Garden Zucchini Pie is an impressive dessert you can prepare in about 1 hour 10 minutes. Made with c. refrigerated, loose-packed hash browns, c. finely chopped onion, c. grated parmesan cheese, medium zucchini, thinly sliced (2 1/2 c.) and garlic, minced, this recipe delivers authentic, satisfying flavors. In a large mixing bowl, combine 1 egg, onion and Parmesan cheese.
Stir in potatoes.
Put potato mixture in a 9-inch pie pan or 10-inch quiche dish.
Pat the mixture over the bottom and up the sides of the pan.
Bake, uncovered, in a 400° oven for 35 to 40 minutes or until golden brown.
Cool slightly on a wire rack. Reduce oven temperature to 350°.
