Garden Brunch Bake
Garden Brunch Bake is an moderately easy dinner. Made with 2 c. zucchini, sliced and quartered, 1/2 c. diced tomatoes, 1/2 c. chopped onion, 1/2 c. grated parmesan cheese and 1/4 tsp. pepper, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Preheat oven to 400Β°.
Lightly grease (or use nonstick cooking spray) a 7 x 11-inch glass baking dish.
Place a layer of zucchini, tomatoes, onions (and meat) in dish.
Sprinkle with Parmesan and pepper.
Combine milk, biscuit mix and eggs.
Beat until smooth (about 1 minute) and pour over vegetables.
Bake about 30 minutes and let stand 5 minutes before cutting.
Top with salsa, if desired.
Serves 6.
