Funnel Cakes
Funnel Cakes is an moderately easy dinner. Made with 2 eggs, beaten, 1 1/2 c. milk, 2 (6 oz.) envelopes martha white flapjax mix, 1 tbsp. sugar and 1/2 tsp. vanilla extract, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Combine eggs, milk, Flapjax mix, sugar and vanilla in medium bowl; mix until smooth.
Heat oil to 375Β° in heavy skillet.
Spoon 1/4 cup batter into funnel, holding finger over funnel opening. Release batter into hot oil in spiral, starting from center.
Fry until golden brown on both sides; drain on paper towel.
Repeat with remaining batter.
Sprinkle generously with confectioners sugar.
Serve warm.
