Funnel Cakes
Funnel Cakes is an moderately easy dinner. Made with 2 eggs, 1 1/3 c. milk, 2 2/3 c. flour, 1/4 c. sugar and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
In large mixer bowl, beat eggs and then add milk.
In small bowl, sift together flour, sugar, salt, baking powder and soda. Add to egg mixture and beat until smooth.
While mixing, heat oil in heavy pan to 375Β°.
Holding finger over bottom of a funnel, pour batter into funnel.
Remove finger and let batter pour into hot oil, swirling in circles from center outward and then drizzling just slightly over all so the cake holds together.
Fry one at a time until golden brown, turning only once.
Drain on paper towels.
Dust with powdered sugar from sifter.
Serve warm.
