Fruity Rice Salad
Fruity Rice Salad is an moderately easy dinner. Made with 3 to 4 c. steamed rice, cooled, 1 can pineapple chunks or tidbits, drained, 1 large navel orange or 11 oz. can mandarin oranges, drained, 1/2 c. green, yellow and/or sweet red pepper, diced and 1/4 c. sliced or slivered almonds, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

If using navel orange, peel and section it, then cut sections into bite-sized pieces.
Combine rice, fruit, peppers and almonds. In small bowl, whisk together salad oil, seasoned rice vinegar, cinnamon, lime juice and honey; pour over rice mixture and gently stir.
Chill.
Serve with honey-mustard dressing.
