Fruited Sweet Potatoes
Fruited Sweet Potatoes is an moderately easy dinner. Made with 16 oz. pared sweet potatoes, cut into 1-inch pieces, 2 tbsp. water, 12 dried apricot halves, chopped, 1 small granny smith apple, pared, cored and chopped and 2 tbsp. raisins, this recipe delivers authentic, satisfying flavors. In a 2-quart microwavable casserole, combine potatoes with the water.
Cover and microwave on High 10 minutes or until potatoes are tender, stirring once. Add remaining ingredients. Stir well to combine. Cover and microwave on High 3 minutes or until apple is tender-crisp.
