Fruit Vinegar is an easy dinner. Made with 1 lb. fresh fruit such as raspberries, blueberries, apricots or figs, 5 c. white wine vinegar and 1 tbsp. sugar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Combine fruit and vinegar in a sterilized glass jar with airtight seal.
Leave in warm place to steep.
Shake jar occasionally.
Strain fruit and vinegar into saucepan, pressing to extract flavor from fruit.
Add 1 tablespoon sugar and stir to blend.
Place mixture over low heat and simmer for 10 minutes. Transfer to sterilized jars.
For a more attractive presentation, add a few fresh berries or pieces of fruit.
