Fruit Pound Cake
Fruit Pound Cake is an moderately easy dinner. Made with 2 c. diced mixed fruit, 1 (4 oz.) pkg. pecans, coarsely chopped, 1 c. dark rum, 4 c. sifted flour and 1 tsp. cream of tartar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Mix the first 3 ingredients; let set overnight.
Combine the flour, cream of tartar, mace and salt.
Cream together 1/2 cup sugar, the butter and egg yolks.
Add the vanilla.
Beat the egg whites with 1 1/2 cups sugar until stiff.
Blend dry ingredients with the butter mixture.
Fold in egg whites, then fruit.
Bake at 350Β° for 1 hour in 2 greased and floured 9-inch tube pans.
