Put first three ingredients in a pan and bring to a boil. Stir in instant potatoes.
Add cream cheese and sour cream.
Mix with mixer.
Grease a 9 x 13-inch pan and a 9 x 9-inch pan.
Fill with potato mixture.
Freeze if you want to use later, or bake at 350Β° for 30 minutes.
Sprinkle Cheddar cheese on and continue baking until cheese melts.
