Frozen Lemon Pie
Frozen Lemon Pie is an easy dinner. Made with 3 eggs, separated, 1/2 c. sugar, 5 tbsp. lemon juice, 1 c. heavy cream and vanilla wafers, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Crush vanilla wafers and put in bottom of buttered pie pan. Beat egg whites until stiff; beat in sugar.
Add yolks one at a time, beating thoroughly after each.
Stir in lemon juice.
Fold in cream after it is stiffly beaten.
Pour in pan and sprinkle vanilla wafer crumbs over top.
Freeze until firm.
Yields 6 servings.
