Frosty Pineapple Pie
Frosty Pineapple Pie is an easy dinner. Made with 1 1/4 c. crushed pineapple, 3 oz. pkg. lemon flavored gelatin, 1 tbsp. lemon juice, 3/4 to 1 c. sugar (depending on sweetness of fruit) and 1 c. chilled undiluted carnation evaporated milk, this recipe delivers authentic, satisfying flavors. To a boil crushed pineapple. Dissolve gelatin in it and add sugar.
Cool until almost stiff.
Whip evaporated milk and lemon until it stands in peaks (very stiff). Pour on top of gelatin mixture.
Beat in slowly with rotary beater.
Pour into or 10-inch pie shell.
Chill at least hour. When serving, garnish with drained crushed pineapple, if desired.
