Frosted Apricot Salad
Frosted Apricot Salad is an moderately easy dinner. Made with 1 (17 oz.) can apricot halves, 1 (8 oz.) can crushed pineapple (in juice), 2 (3 oz. each) pkg. apricot jell-o, 1/2 c. mayonnaise and 1 c. cool whip, this recipe delivers authentic, satisfying flavors. Drain apricot halves and pineapple reserving liquids. Add water to liquids to make 1 1/2 cups.
Chop the apricots.
Dissolve the Jell-O in 2 cups boiling water.
Add measured liquid and chill until slightly thickened. Fold in fruits.
Pour into 9-inch square pan. Chill until set, but not firm.
Blend mayonnaise into Cool Whip. Spread over gelatin.
Sprinkle with coconut.
Chill until firm.
