Frito Soup
Frito Soup is an impressive dinner. Made with 2 c. pinto beans, 6 c. water, 2 lb. soup bones, 1 stalk celery, chopped and 1/2 c. chopped onion, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
π¨βπ³ Instructions
Soak pinto beans in water for 3 hours.
Simmer soup bones, celery, onion, peppercorns and salt with beans for 3 hours. Remove bones and add stewed tomatoes, whole tomatoes, green chilies and chili powder.
Simmer 2 hours.
Serve with Doritos or Fritos, crumbled in bottom of bowl and topped with grated Mozzarella cheese.
