Fried Ripe Plantains
Fried Ripe Plantains is an easy dinner. Made with 2 large ripe plantains (yellow with black spots; not totally black) and 1/2 c. your favorite cooking oil, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Peel the bananas and cut diagonally approximately one-half inch thick.
Place the oil in a frying pan (or a deep fryer). Allow the oil to get hot; you should see some bubbles, but not smoke.
Place the plantain sections into the oil and cook on both sides until golden light brown in color.
Place on a paper towel to blot excess oil.
Serve hot.
Serves six.
