Fried Rice
Fried Rice is an moderately easy dinner. Made with 4 tbsp. bacon fat or cooking oil, 2 eggs, optional, 1/2 c. chopped scallions, 1/2 c. leftover roast pork, diced and 1/4 c. celery, sliced, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Heat 1 tablespoon fat in a small skillet.
Break eggs into a bowl and beat well.
Add to skillet and cook omelet fashion.
Break eggs into small pieces and set aside.
In a large skillet heat remaining 3 tablespoons fat.
Add scallions and celery, stir-fry. Add pork and fry briefly.
Stir in peas, then add the rice, stirring rapidly.
Add 1 tablespoon soy sauce, mixing well, then add eggs.
Cook and stir until everything is heated through.
