Fried Rice
Fried Rice is an moderately easy dinner. Made with 1 c. cold cooked rice, 2 eggs, 1 pkg. frozen peas and carrots, 1 tsp. ginger and 2 stalks chopped green onion, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Rinse peas and carrots in cold water.
Heat 1 tablespoon cooking oil in pan.
Add peas, carrots and ginger.
Cook approximately 2 minutes.
Remove from pan and set aside.
Heat 1 tablespoon cooking oil in pan.
Add onions.
Stir and cook for 1 minute.
Add beaten eggs and scramble.
Add rice and stir until hot (about 5 minutes).
Add peas and carrots and mix well.
Add chopped pork, ham or shrimp.
Serve hot.
