Fresh Vegetable Pita
Fresh Vegetable Pita is an moderately easy dinner. Made with 8 oz. pkg. cream cheese, 1 tsp. lemon, 3/4 c. chopped carrots, 1/4 c. cucumbers and 1/4 c. onion, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Put all vegetables, except tomatoes, in food processor. Process fairly fine. Drain well on paper towels.
Mix with cream cheese and lemon.
Add some mayo for proper consistency. Take
1/2 pita and put in a couple of tomato slices and fill with of the vegetable spread. A slice of cheese is also good in this pita sandwich.
