Fresh Tongue
Fresh Tongue is an moderately easy dinner. Made with 1 (3 to 5 lb.) tongue, 4 c. cold water, 1 1/2 tsp. salt, 1/2 c. diced celery and 1/4 c. chopped onion, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Wash tongue.
Place in pot. Add remaining ingredients.
Cover and bring to a boil. Simmer over low heat until tender, allowing about 50 minutes per pound.
Let tongue cool in cooking liquid. Remove skin. Slice and serve cold or hot. Makes 6 servings.
