Fresh Corn Chowder
Fresh Corn Chowder is an moderately easy dinner. Made with 6 fresh medium ears of corn, 1/4 c. chopped onions, 4 c. milk, 2 tbsp. butter and 3 tbsp. all-purpose flour, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Cut corn off cob.
In saucepan, combine corn, onion, 1/2 cup water and 1/2 teaspoon salt.
Bring to a boil.
Reduce heat.
Cover and simmer about 15 minutes or until corn is barely done; stir occasionally.
Stir in 3 1/2 cups milk, butter, salt and pepper, combining remaining milk and flour mixture to corn.
Cook and stir until thick and bubbly.
Slowly stir in about 1 cup of the hot mixture into beaten egg.
Return to hot mixture in saucepan.
Cook over low heat 2 more minutes.
Do not boil.
Serves 6.
