Fresh Coconut Layer Cake
Fresh Coconut Layer Cake is an moderately easy dinner. Made with 2 c. cake flour, 2 c. sugar, 1 c. coconut milk, 2 tsp. cream of tartar and 1/2 tsp. bicarbonate of soda, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Sift flour before measuring.
Add cream of tartar and soda to flour and sift.
Beat egg yolks until very light; add sugar.
Add vanilla to coconut milk.
Alternate flour and coconut milk to sugar.
Fold in whites, beaten stiff.
This makes 4 layers.
Bake for 30 minutes in moderate oven.
Ice with Fresh Coconut Icing.
