Combine sugar, oil, vanilla, eggs, lemon juice and salt in a mixing bowl.
Beat well.
Sift flour and soda; add to first mixture and beat well.
Add apples and pecans; mix well.
Bake in greased and floured tube pan for 1 1/2 hours at 325Β°.
