Cream sugar and oil.
Add eggs.
Beat well.
Add flour, vanilla, salt and soda; beat well.
Add diced apples and small jar maraschino cherries and 1 cup Angel Flake coconut or 1 cup nuts. Cook in cake pan or angel food pan.
Keeps really good - moist.
