Cream the oil, sugar and eggs.
To creamed mixture, add flour, soda, salt and cinnamon sifted together.
Mix well and add apples, nuts and vanilla.
Grease and line with wax paper in a tube pan. Cook in a 325Β° oven for 1 hour and 15 minutes.
Can top with Caramel Icing or plain.
