French Spring Soup
French Spring Soup is an moderately easy dinner. Made with 3 tbsp. butter, 3 large scallions or leeks, snipped, 1 small onion, minced, 3 potato, pared and thinly sliced and 1/2 lb. raw spinach leaves, snipped rather fine, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Melt butter in kettle.
Slowly saute scallion and onion until tender.
Add potatoes, carrot, 1 1/2 teaspoon salt and water. Cover and bring to a boil; simmer 15 minutes.
Stir in rice and asparagus. Cover and simmer 25 minutes.
Add spinach; cover and simmer 5 minutes.
Stir in 4 teaspoons salt, pepper and cream.
