French Potato Salad
French Potato Salad is an moderately easy dinner. Made with 16 new red waxy potatoes (about 2 lb.), salt and pepper, 2 tbsp. distilled white vinegar, 6 tbsp. oil and 1/2 c. finely chopped fresh parsley, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Rinse potatoes and put them in a large saucepan with water to cover and salt to taste.
Bring to a boil and cook 20 minutes or until the potatoes are tender.
Do not overcook or the potatoes will be mushy.
Drain the potatoes and let stand until ready to prepare the salad.
The salad should be made while the potatoes are still warm.
Peel the potatoes and cut them into 1/4-inch thick slices.
There should be about 6 cups.
Put the slices in a mixing bowl and sprinkle them with the wine.
