Fluffy Pumpkin Pie
Fluffy Pumpkin Pie is an moderately easy dinner. Made with 1/2 lb. marshmallows, 1 c. pumpkin (canned or cooked), 1/2 tsp. ginger or 1 tsp. pumpkin mix, 1 c. whipping cream and 1/2 tsp. cinnamon, this recipe delivers authentic, satisfying flavors. Put marshmallows, pumpkin and spices in top of a double boiler.
Heat and stir until marshmallows are melted.
Mix well and let cool, 45 minutes to 1 hour at room temperature or overnight.
Stir in 1/3 cup whipping cream.
Carefully fold in remaining cream.
Pour in a baked 9-inch pie shell.
