Fluffy Coconut Pudding
Fluffy Coconut Pudding is an moderately easy dinner. Made with 1 envelope unflavored gelatin, 1/4 c. cold water, 3 tbsp. boiling water, 3 egg whites and 1/8 tsp. salt, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Soften gelatin water.
Add boiling water and stir until dissolved.
Temperature.
Beat egg whites with salt until frothy.
Add sugar, one tablespoon at a time and beat well after each addition.
Continue beating until mixture holds when beater is lifted..
Slowly beat in gelatin. Add vanilla to whipped cream.
Mix and fold into egg whites. Fold in coconut.
Cover and chill at least 4 hours.
