Fish Cakes
Fish Cakes is an moderately easy dinner. Made with 2 6 oz. cans salmon (drained, skin & bones discard), 1 tbsp. lemon juice, 1 c shredded mozzarella, 1/2 c chopped green onion and 1 box stuffing mix, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Mix together stuffing mix, water, mayonnaise, fish, lemon juice, cheese, and vegetables.
Cover and refrigerate for 10 minutes.
Heat nonstick skillet sprayed with cooking spray on medium heat.
Shape 1/3 cupfuls of the stuffing mixture into pattie, add to skillet, cook 3 minutes on each side or until golden brown on both sides.
