Fiesta Chili
Fiesta Chili is an moderately easy dinner. Made with 2 medium onions, 2 jalapeño peppers, 4 tbsp. bacon fat, 1 tsp. salt and 1 1/2 lb. coarsely ground beef, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Melt fat in deep heavy pan; add chopped onions and diced jalapeños and cook over low heat until done, but not browned.
Add ground beef and cook until browned, about 10 minutes.
Drain liquid from beans into small bowl and save.
Add beans, soup, chili powder and salt to beef in pan.
Stir well.
Cover pan and let chili cook slowly over low heat for about 30 minutes.
If chili gets too dry, add desired amount of bean liquid.
Can be made ahead of time and reheated.
It even tastes better the next day.
