Fadge(Potato Bread) is an moderately easy dinner. Made with 2 lb. potatoes, peeled and cut into quarters, 1 egg, beaten, 2 to 4 tbsp. butter, 3 tbsp. flour and 1 1/2 tbsp. chopped parsley, chives and lemon thyme, mixed (optional), this recipe delivers authentic, satisfying flavors. Boil potatoes until tender, 15 minutes.
Drain well.
Place potatoes in bowl and mash well.
Add egg, butter, flour and herbs. Mix well.
Add a few drops of milk if mixture is too stiff.

Dip in seasoned flour.
Fry on lightly greased griddle until crusty and golden on one side, 4 to 5 minutes.
