Enchiladas
Enchiladas is an moderately easy dinner. Made with 1 lb. ground beef, 1 clove garlic, 1 tsp. salt, 1/2 c. chopped onion and 1/2 lb. grated cheddar cheese (mild), this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Brown ground beef, garlic, salt and chopped onion.
Drain oil. Add 1/2 pound grated cheeses; heat until melted.
Add sour cream, sliced mushrooms and olives; set aside.
Soften 12 corn tortillas in hot oil; drain.
Fill each tortilla with meat mixture; roll tightly.
Place seam side down on foil-lined cookie sheet (spray foil with cooking spray so cheese won't stick).
Top with slice of Mozzarella cheese.
Sprinkle with parsley flakes.
Cover with foil (sprayed).
Bake at 350Β° for 20 minutes or until cheese is melted.
