Emerald Salad
Emerald Salad is an moderately easy dinner. Made with 1 small box lime jell-o, 1/2 lb. cottage cheese, 12 big marshmallows, 1 c. crushed pineapple, drained (save juice) and 1/2 c. pineapple juice, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Melt jello in 1 1/2 cups boiling water in a medium-large pot on stove.
Add marshmallows until they are melted.
Add pineapple juice.
Remove and put in refrigerator to chill slightly, then add whipping cream, pineapple, cottage cheese and nuts.
Fold together.
Put in a mold and chill.
