Electric Skillet Pineapple Upside-Down Cake is an easy dinner. Made with 1 (12 oz.) can pineapple rings, drain and save juice, 5 tbsp. brown sugar (more or less to taste), 4 tbsp. butter, 2 eggs and 1 box yellow cake mix, this recipe delivers authentic, satisfying flavors. Melt butter in a 300Β° electric skillet.
Place pineapple on butter in bottom of skillet.
Add brown sugar to taste.
Mix cake mix, eggs and pineapple juice.
This may have lumps.
Not to worry.
Pour on pineapple rings and bake for 8 minutes with cover on. Cool 2 minutes. Flip onto plate.
Garnish with maraschino cherries.
