Eldorado Casserole
Eldorado Casserole is an moderately easy dinner. Made with 1 lb. ground beef, 1 tsp. minced garlic (optional), 1/2 c. sliced olives (optional), 1 c. cottage cheese and 12 oz. monterey jack, shredded, this recipe delivers authentic, satisfying flavors. Mix ground beef, onion and garlic in skillet.
Cook until meat is browned.
Add tomato sauce and olives.
Simmer for 10 minutes. Mix cottage cheese, sour cream and chilies.
Butter a 9 x 13-inch casserole and layer ingredients in the following order
Tortilla chips, meat sauce, cottage cheese mix and Monterey Jack; repeat. Bake at 375Β° for 25 to 30 minutes.
