El-Egg-Ant Brunch
El-Egg-Ant Brunch is an moderately easy dinner you can prepare in about 1 hour 40 minutes. Made with hard-cooked eggs, c. sour cream, . prepared mustard, . salt and c. chopped green pepper, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Preheat oven to 350Β°.
Cut eggs in half lengthwise.
Remove yolks and mash.
Combine yolks, 3 tablespoons sour cream, mustard and salt and mix well.
Refill egg whites.
Saute green pepper and onion in butter 5 minutes.
Stir in pimentos, soup and remaining sour cream.
Pour sour cream mixture into 9 x 9-inch dish.
Place eggs on top.
Sprinkle with cheese and bake for 20 minutes.
