El Dorado Casserole
El Dorado Casserole is an moderately easy dinner. Made with 2 lb. ground beef, 1 small can chopped olives, 1 brown onion, 28 oz. can tomato sauce and 8 oz. bag tortilla chips, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cook meat; drain.
Add olives, onion and tomato sauce.
Mix sour cream, cottage cheese and Ortegas.
In a 14 x 9-inch baking dish, crumble 1/2 the tortilla chips, lining the bottom of the pan.
Next, spread 1/2 the meat mixture over chips, then 1/2 the sour cream mixture over top.
Layer again, starting with chips, then meat, then sour cream mixture.
Cook at 350Β° for 35 minutes. Serves 5.
