Eggplant Parmesan is an easy dinner. Made with 1 medium eggplant, 2 c. spaghetti sauce and 1/2 to 3/4 c. parmesan cheese, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Peel eggplant.
Dice eggplant in cubes and cook in water for 10 to 15 minutes.
Drain off water.
Spread eggplant in casserole. Mix 1/2 of Parmesan cheese in spaghetti sauce; pour over eggplant.
Sprinkle remaining cheese.
Bake in a 350Β° oven for 25 to 35 minutes.
