Eggplant Parmesan
Eggplant Parmesan is an impressive dinner. Made with 1 can tomato sauce, 1/2 c. grated romano cheese, 1 (8 oz.) pkg. grated mozzarella, 1 egg and 1 eggplant, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Peel and slice eggplant very thin.
Dip in egg and Italian bread crumbs.
Fry in olive oil and drain.
Make a sauce with tomato sauce, Romano cheese, salt and pepper, basil, oregano, onion, garlic, Parmesan cheese and mushrooms.
In casserole dish, alternate sauce, eggplant, and Mozzarella cheese (like a lasagna). Bake at 350Β° for approximately 25 to 30 minutes.
