Eggplant Italiano
Eggplant Italiano is an moderately easy dinner. Made with 1 medium-size eggplant, pared and cut into 1/4 to 1/2-inch slices, 1 medium onion, sliced thin, 1 tsp. parsley flakes, 1 large jar garden-style spaghetti sauce and 1 c. italian-style breadcrumbs, this recipe delivers authentic, satisfying flavors. Lightly grease bottom of 8 x 12 x 2-inch baking dish.
Cover bottom with thin layer of spaghetti sauce.
Layer eggplant, 1/2 teaspoon parsley flakes, onion, 1/2 of spaghetti sauce, 1/2 of Italian bread crumbs and 1/2 of cheese.
Repeat, ending with cheese.
Bake 30 to 40 minutes at 350Β°.
