Eggplant Istanbul
Eggplant Istanbul is an moderately easy dinner. Made with 1/2 c. salad oil, 1 eggplant, peeled and cubed, 1 onion, finely chopped, 2 cloves garlic, crushed and 2 tomatoes, peeled and cut into eighths, this recipe delivers authentic, satisfying flavors.
