Eggplant Dressing
Eggplant Dressing is an moderately easy dinner. Made with 1 1/2 to 2 c. cooked rice, 2 or 3 eggplants, peeled and sliced, 1 bell pepper, chopped, 1 onion (medium size), chopped and 2 leaves celery, chopped, this recipe delivers authentic, satisfying flavors. Cook eggplant in medium size boiler with water until tender; drain.
Save water.
Brown meat in cooking oil.
Add all other ingredients; cook until tender.
Add eggplant.
If too dry, add water from eggplant.
Cook all until of a casserole consistency.
