Eggplant Dip
Eggplant Dip is an moderately easy dinner. Made with 1 large eggplant, 1 tbsp. salt, 3 tbsp. olive oil, 10 garlic cloves, minced and 1/2 c. water, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Peel, cut and cube the eggplant; leave soaking in water with salt for 15 minutes.
Saute in pan 1/2 of the garlic in olive oil. Drain eggplant well and add to garlic.
Cook until eggplant is soft.
Dissolve the flour in 1/2 cup water, then add to eggplant. Stir until thickens.
Mash with fork.
Add the other 1/2 of garlic, salt and mayonnaise.
Serve with onion pita bread.
