Ed'S Stuff is an moderately easy dinner. Made with 2 t. safflower oil, 1 lb. boneless chicken breasts, 1 jar thick and chunky picante sauce, tortilla chips and monterey jack cheese, shredded, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Cut chicken breasts into bite sized pieces.
Heat 2 tablespoons oil in skillet.
Cook chicken until done.
Pour picante sauce into hot skillet and cook uncovered 2 to 3 minutes to thicken.
Place tortilla chips on a microwave safe plate, spoon chicken mixture on chips, sprinkle with cheeses.
Heat in microwave on high for 30 seconds or until cheese is melted.
