Preheat oven to 425°.
In medium bowl, combine condensed milk, water, salt and vanilla.
Add eggs; mix well.
Pour into pie shell. Sprinkle with nutmeg.
Bake 10 minutes; reduce heat to 300° and bake 20 to 25 minutes longer or until knife inserted near center comes out clean.
Cool coconut.
Add 1 cup coconut to filling.
