Combine first three ingredients in a small bowl.
Stir in coconut, egg whites and vanilla.
Drop by tablespoonfuls, 2 inches apart, onto a cookie sheet, coated with cooking spray. Bake at 350Β° for 20 minutes or until lightly browned.
Remove from cookie sheet and let cool on a wire rack.
Yields 1 dozen cookies.
